ALMOND BUTTER BROWNIES

These brownies are simple to prepare and contain real, wholesome ingredients that support energy levels as opposed to store bought brownies, which are commonly made with refined carbohydrates and processed sugar that hamper blood sugar levels. These brownies are not overly sweet and contain cacao (the unroasted and unprocessed version of cocoa) — retaining its antioxidants, fibre, magnesium, protein and calcium content.

 

Ingredients

1/3 cup almond butter

2 tablespoons coconut oil

3/4 cup almond meal

1/3 cup cacao powder

1/3 cup maple syrup

2 large free range eggs

½ teaspoon vanilla bean paste or vanilla extract

½  teaspoon baking powder

1/2 cup macadamia nuts (chopped roughly)

Method

  1. Preheat oven to 160 degrees Celsius and line a brownie slice tin with baking paper.

  2. Use a wooden spoon to mix all the ingredients together (except the macadamia nuts) in a large bowl, ensuring all ingredients are combined well.

  3. Once combined add the macadamia nuts and stir through.

  4. Transfer mixture to prepared slice tin and bake in oven for about 12 mins. Mixture should feel firm on top, yet still lightly soft and gooey on the inside.

  5. Allow to cool for 10 mins.
