BANANA BREAD

This banana bread is simple to make and nutrient dense in comparison to store bought banana breads, which are typically high in refined white flour, sugar and saturated fats. Chia seeds are added for their protein and omega-3 content while macadamia oil provides a healthy dose of monounsaturated fats — beneficial for overall wellbeing.

 

Ingredients

  • 1/2 cup almond meal

  • 1 cup wholemeal spelt flour

  • 1 teaspoon baking powder

  • 1 teaspoon bicarb soda

  • 1 tablespoon cinnamon

  • 1 tablespoon chia seeds

  • 1 ½ large bananas mashed

  • 1/3 cup maple syrup

  • 1/3 cup macadamia oil

  • 1/3 cup almond milk

  • 1 egg

Method

  1. Place almond meal, spelt flour, cinnamon, baking powder, bicarb and chia seeds in a bowl and stir to combine. 

  2. Place egg, milk, macadamia oil, bananas and maple syrup/dates into a food processor and blend until smooth.

  3. Add dry ingredients into blender and process again until combined.

  4. Place contents into a greased loaf tin.

  5. Bake at 180 degrees for about 40 mins (or until cooked through and brown on the top).

NOTES

These can also be made into muffins and are perfect for school lunches (you could omit the almond meal and use extra flour if the school is nut free). They also freeze well.
